Loaded Mediterranean Hummus

Creamy and versatile, this hummus recipe can be enjoyed in many ways and with whatever toppings you’d like! It’s a simple combination of tender chickpeas, nutty tahini, zesty garlic, and tart lemon juice. Just blend it all together with a splash of that chickpea liquid to make it extra smooth and creamy. Then, load up your hummus with the likes of cucumber, herbs, and Marinated Olives and Feta.

These toppings are just suggestions and meant to inspire: You can certainly customize your own loaded Mediterranean hummus with other toppings. Think falafel, red onion, roasted red bell peppers, artichoke hearts, crispy chickpeas, grilled chicken… get creative with the foods you like and what you have on hand! We definitely recommend some crunchy vegetables, olives, and feta to get things started. Then, enjoy it with pita bread or chips, in lettuce wraps, or however else sounds good. In particular, a grilled zucchini boat stuffed with this loaded hummus sounds perfect for a summer afternoon!

Loaded Mediterranean Hummus

Ingredients

Hummus

  • 2 cans chickpeas, liquid reserved
  • ¼ cup tahini
  • 3 cloves garlic, minced or grated
  • 2 tbsp lemon juice
  • Sea salt and freshly cracked black pepper, to taste

Toppings, as desired

  • Marinated olives & feta
  • Cucumber, chopped
  • Cherry tomatoes, halved
  • Fresh herbs such as dill, parsley, chives, basil
  • Pine nuts, toasted
  • Extra virgin olive oil

Instructions

  1. Add all ingredients for the hummus to a food processor. Process until well blended and smooth, about 30-60 seconds. 
  2. Pour in 2-3 spoonfuls of the reserved aquafaba chickpea liquid and continue blending until very smooth and creamy, about 30 more seconds. Taste and adjust seasonings and ingredients as desired.
  3. Spread desired amount of hummus into a shallow bowl or plate. Top with desired toppings such as Marinated Olives and Feta, cucumber, cherry tomatoes, fresh herbs, toasted pine nuts, and a drizzle of extra virgin olive oil.
  4. Spoon loaded hummus on pita bread, lettuce cups, or otherwise as desired!
