Grilled Cilantro Lime Chicken Tacos
Ingredients
- 2 lbs boneless skinless chicken thighs
- Small tortillas of choice
- Taco topping of choice such as Pickled Red Onions, cilantro, lime, and jalapeno
Cilantro Lime Vinaigrette
- 1 bunch cilantro, most stems removed
- ¾ cup avocado oil or extra virgin olive oil
- ¼ cup white vinegar
- 4 cloves garlic
- 1 jalapeno, halved and seeded
- 2 limes, juiced
- 1 tsp salt
- 1 tsp dried oregano
Instructions
- Make the sauce: Add all ingredients for the sauce to a blender and blend on high until mostly smooth, about 30 seconds.
- Marinate the chicken: Submerge the chicken thighs in the cilantro lime sauce for at least 2 hours or overnight.
- Grill the chicken: Preheat the grill to medium-high heat. When it’s hot, grill the chicken for 5-7 minutes per side over medium heat or until cooked through.
- Remove the chicken from the heat and let sit for 5 minutes before slicing.
