Grilled Cilantro Lime Chicken Tacos

Grilled Cilantro Lime Chicken Tacos


  • 2 lbs boneless skinless chicken thighs
  • Small tortillas of choice
  • Taco topping of choice such as Pickled Red Onions, cilantro, lime, and jalapeno

Cilantro Lime Vinaigrette 

  • 1 bunch cilantro, most stems removed
  • ¾ cup avocado oil or extra virgin olive oil
  • ¼ cup white vinegar
  • 4 cloves garlic
  • 1 jalapeno, halved and seeded
  • 2 limes, juiced
  • 1 tsp salt
  • 1 tsp dried oregano


  1. Make the sauce: Add all ingredients for the sauce to a blender and blend on high until mostly smooth, about 30 seconds. 
  2. Marinate the chicken: Submerge the chicken thighs in the cilantro lime sauce for at least 2 hours or overnight.
  3. Grill the chicken: Preheat the grill to medium-high heat. When it’s hot, grill the chicken for 5-7 minutes per side over medium heat or until cooked through.
  4. Remove the chicken from the heat and let sit for 5 minutes before slicing.
  5. Assemble the tacos with the sliced chicken and desired toppings such as Pickled Red Onions, cilantro, lime, and jalapeno!
